The Shaggy Mane or Lawyer’s Wig is an easy to identify mushroom. The smaller specimens are the best to eat. It is a mushroom that needs to be prepared immediately after harvest, as it turns black and inky with age. It is best to dry sauté to cook off excess water, and then add butter or oil for the final few minutes.
